Marie-Mathilde’s journey of food making dated back to her grandfather who was a pâtissier-confiseur-chocolatier-glacier in France. The smell of freshly cooked pastries, and the love for homemade dishes accompanied Marie-Mathilde's childhood. From teaching Elementary and Art at the French American School of Princeton to crafting a vision for Eclair Cafe, Marie-Mathilde wishes to recreate a little corner of France in New Jersey!

Ron’s culinary journey started abroad. During his many trips to Europe and Asia, he fell in love with the culinary art and started creating his own flavors. From doctor to chef, he graduated from the French Culinary Institute in NY but always keep health and nutrition on the back of its mind.

Together Marie-Mathilde and Ron created Éclair Café, a delicate and homely French Café where guests can taste traditional and revisited delicacies from France.
